A recipe for Easter created by my thermomix wizz, Bridgette
Ingredients
- Peel of a small orange
- 250g raw unsalted cashews
- 20g macadamia oil ( or whatever oil you prefer )
- 25g coconut flour
- 1 tspn bicarb
- 4 eggs
- 70g filtered water
- 1 tblspn apple cider vinegar
- 20g honey
- 50g currants
- 1 tspn allspice
- ¼ tspn cinnamon
- ¼ tspn cardamon
- ¼ tspn powdered ginger
- ¼ tspn nutmeg
Method
- Separate eggs and whip egg whites until peaks form, set egg whites aside, rinse and dry bowl
- Zest orange peel speed 9 / 5 secs
- Add cashews and mill speed 9 / 10 secs
- Add oil speed 6 / 15 – 20 secs until the cashews turn into nut butter
- Add egg yolks, water, apple cider vinegar, honey and spices and beat speed 5 – 6 / 15 secs
- Add coconut flour and bicarb speed 4 / 10 secs. Scrape down sides then speed 5 / 10 secs.
- Scrape mixture into a bowl and using the spatula, gradually fold in the egg whites and currants
- Spoon mixture into a cupcake tray and bake at 180C for 20 minutes
- Pipe a cross on top using Thermomix coconut butter and a gladbag with the corner cut off.
- Delicious cut in half and generously spread with butter! Makes 12 mini buns.
