Paleo Mini Hot Cross Buns

A recipe for Easter created by my thermomix wizz, Bridgette

Ingredients

  • Peel of a small orange
  • 250g raw unsalted cashews
  • 20g macadamia oil ( or whatever oil you prefer )
  • 25g coconut flour
  • 1 tspn bicarb
  • 4 eggs
  • 70g filtered water
  • 1 tblspn apple cider vinegar
  • 20g honey
  • 50g currants
  • 1 tspn allspice
  • ¼ tspn cinnamon
  • ¼ tspn cardamon
  • ¼ tspn powdered ginger
  • ¼ tspn nutmeg

Method

  1. Separate eggs and whip egg whites until peaks form, set egg whites aside, rinse and dry bowl
  2. Zest orange peel speed 9 / 5 secs
  3. Add cashews and mill speed 9 / 10 secs
  4. Add oil speed 6 / 15 – 20 secs until the cashews turn into nut butter
  5. Add egg yolks, water, apple cider vinegar, honey and spices and beat speed 5 – 6 / 15 secs
  6. Add coconut flour and bicarb speed 4 / 10 secs. Scrape down sides then speed 5 / 10 secs.
  7. Scrape mixture into a bowl and using the spatula, gradually fold in the egg whites and currants
  8. Spoon mixture into a cupcake tray and bake at 180C for 20 minutes
  9. Pipe a cross on top using Thermomix coconut butter and a gladbag with the corner cut off.
  10. Delicious cut in half and generously spread with butter! Makes 12 mini buns.
